moroccan tagine soup

so i know i've only been posting a bunch of soups lately, and i'm sorry about that (not really). i just love soups!

this soup is moroccan inspired, and is a lot like a tagine. but since it is not cooked in a tagine pot, i'm calling it a tagine soup. plus it's more soupy than a normal tagine.

this soup is SOO good. my new fave. and i think i might say that with every new soup i make, but oh well. it's true every time, i swear! the hubs and i can't get enough of this. so different, but amazing. the combination of the sweet apples and coconut milk paired with the spicy chiles is to die for.


ingredients:
1 large sweet potato, peeled, diced
1/4 yellow onion, diced
1 yellow bell pepper, cored, seeded, diced
2 small granny smith apples, cored, peeled, diced
2 14-oz cans of Muir Glen fire roasted diced tomatoes
1 4-oz can of diced mild green chiles (or hot if you want it more spicy)
1 15-oz can garbanzo beans, drained and rinsed
1 14-oz can coconut milk
1 tbsp red Thai Kitchen curry paste
1 32-oz carton vegetable broth (4 cups)
pinch of cinnamon, coriander, and cumin
1/4 tsp sea salt (or to taste)
4 tbsp lime juice
1/2 cup cilantro, chopped
1/2 cup spinach, chopped
1/4 tsp red pepper flakes (optional)

directions:
1. throw everything except the last 4 ingredients into a large pot and mix really well.
2. on medium-high, bring to boil.
3. reduce to low and let simmer for 30-45 minutes, or until sweet potatoes are cooked all the way through.
4. right before serving, stir in lime juice, cilantro, spinach, and red pepper flakes.
5. taste and adjust to your liking, adding either more sea salt or red pepper flakes.
6. garnish with fresh chopped cilantro.
